Today's Tip: Do not ever lighten your hair with Lemon Juice in the sun! Why? You will end up with 1st, 2nd and 3rd degree burns! The lemon juice sun combo fries your skin:-(
We ventured out to a near by suburb to see fireworks last night and got rained out! We were a bit bummed but the girls had fun playing in the rain. Maddie is off school today, so she says, "What will we do for celebrations?" I say, "I don't Know." Maddie (My end of the world as we know it girl) says, "It will be the 1st 4th we've never done anything and it will be horrible and boring!" Bleek:-o Okay Maddie, you win! Mama is the first one up today scouring the web to find something in the area FUN! 10am Parma Parade, 2-11pm Berea activities for the 4th include inflatable bounce houses, face painting and more. We'll be there or be square (well, just me for the square part;-P).
So, the one good day I have this week to get things done because there are no appointments or school I will spend doing this! Which I can't wait, to bad I will be in bed exhausted and in pain for the rest of the week from such simple activities.
Here's my Vegetarian Quiche Improvised Version from Better Homes and Gardens Cookbook: I always use a pre made deep dish crust. Thaw in room temp for 10-20 minutes. Poke holes in bottom with fork and bake 8-11 minutes. Fill hot crust with quiche mix and bake 28-40 minutes. Tip: It takes less time in a convection oven!
We do broccoli in ours! We chop about 1/2 cup to a cup. We chop about the same amount or less onion, depending on preference. Cook onion in skillet with oil till soft and opaque.
In small bowl, 1/2 cup grated cheddar cheese and we had to substitute 1/2 cup mozzarella for swiss, plus 1 Tbsp of flour hand tossed in, set aside. Take note I used to be a Pampered Chef consultant, love my food prep toys!
In larger bowl, mix 3 (not 4) eggs, 1 1/2 cups milk, cooked onion, broccoli, 1/4 tsp salt, 1/8 tsp pepper, and lastly the cheese. We actually just eye the salt and pepper and skip the garlic all together.
Then bake somewhere! We use our retro convection oven. Why? Because we had a power surge back in January that burnt up a bunch of our appliances and we (my hubster) are procrastinators! We picked that baby up from craigslist and use it and the crock pot for everything!
And, here she is! The baked to perfection oh so yummy Vegetarian Quiche! Yummy in my Tummy;-P
